Mexico - try the area south of Cancun. Cancun is a tourist trap but go an hour south and it's much better. We stay at all inclusive resorts and usually go on 2-3 day trips while we are there. Xel-Ha is very good. We have enjoyed the Barcelo resort, snorkeled with sea turtles every day right off their beach. Coba is nice, also got to visit a Mayan village and meet the little girl that was in Mel Gibson's Apocalypto (she was paid $20,000 - the casting agent in Cancun kept $18,000 of it).
