Not forgotten, but in recent years, I think no pitcher is more underrated than Tim Hudson.
Games are won on run differential -- scoring more than your opponent. Runs are runs, scored or prevented they all count the same. Worry about scoring more and allowing fewer, not which positions contribute to which side of the equation or how "consistent" you are at your current level of performance.

Fred Norman, especially as a Red.
A late bloomer, didn't get his career started until he was 28, but as a Red, over seven seasons, went 85-64 with a 3.35 ERA. What I liked about him was that he was a short lefty, listed at 5 foot 9, but probably shorter. Great curveball. One of the forgotten, but very important members of the BRM.

I'll second Soto. First one that came to my mind. Crying shame he pitched for such sucky teams. What a changeup.
Was always amazed at the Whale's run. Looked like they pulled him out off a beer league softball field. Come to think of it, his velocity wasn't much more than slow pitch softball. But man, his ball could sink and he never threw the same speed twice.

Hitters who avoid outs are the funnest.
I think you could throw Mark Buerhle up there with Tim Hudson. Hudson has a slight edge over Buerhle, but they have pretty comparable numbers. Buerhle has about 200 less strikeouts, and his career ERA+ is 6 less at 118 vs. 124 for Hudson. Buerhle has less walks though and is 4 years younger.
