I'll go with Hendrix. I'd ask for some guitar lessons, but mainly I'd just want to watch him play.
Tom Morello is an interesting guy. Hanging out with him would be alright.
Also, not really rock and roll, but Ketch Secor of Old Crow Medicine Show would be a hoot.
