I have a recipe for darn good dinner rolls. I learned it from my late grandmother a few years ago. We make them for darn near every occasion.
Start with a stick of crisco shortening. I use the butter flavor, but it doesn't really matter much. Put the crisco stick in a bowl with 3/4 cup of sugar and a small amount of salt, maybe half a tsp or so. Get a cup of water boiling on the stove and while you're waiting on that to boil get a cup of luke warm water and dissolve 2 packets of yeast in the water. Beat up 2 eggs separately in another bowl. When the water comes to a boil, pour it in the bowl with the crisco, sugar, and salt and beat the daylights out of that with a wooden spoon or a mixer. Then pour in the eggs, beat that for a bit, then pour in the yeast water and beat everything thoroughly. Then add in 5 1/2 cups of flour and mix thoroughly. You'll need a wooden spoon or a good mixer with dough hooks.
Put a towel over the bowl and put it in the fridge for about an hour or two until it rises good. Take it out of the fridge and roll the dough out in little balls, about the size to fit three of them in one hole on a muffin pan. I dip the balls in melted butter and then put them in the muffin pan 3 to a hole. Leave them sit out on the counter and they will rise a bit in the pans. Leaving them on top of the stove while the oven is preheating works well. About 30-45 minutes and they should have risen pretty well. Then bake them for 10-12 minutes at 350-375 depending on your oven. If you roll the balls small enough you should get about three dozen rolls. Sometimes I only get two and half dozen if I roll them bigger.

shred two Yukon Gold (or similar size) potatoes. add an ounce of button mushrooms, a roma tomato, a sweet pepper, 1/8 cup onion, half a green jalapeno, and half a Hungarian wax pepper. cook this hash one side for 5-8 minutes on middle heat with a 1/8-1/4c water. flip, and repeat water and cook time. scrumptious hash browns without fat. serves three. adjust as necessary. we do this for breakfast, brunch, lunch, or after lunch snack twice to four times a week.
