It’s the 4th of July. When they stuck the feather in Yankee Doodle’s hat they didn’t call it Potato Salad
. They called it macaroni. For the 4th, it has to be macaroni.

I like a potato just about any way you can prepare it; fried, baked, roasted and even scalloped. But I do not like potato salad. Never did and never will. So you know by that what my choice is.

So instead I made a black eyed pea salad
I like German and Amish styles of potato salad. Store bought "loaded" potato salad is vile. Fake bacon scent makes me nauseous.
Macaroni Salad is crap. My wife likes it though.

I make a Greek pesto pasta salad that’s pretty good. With tomato, olives, feta, and cucumber. I make my own pesto.

My husband and I got some Mediterranean recipe books. We're both diabetic. Once in awhile he makes pasta salads. I absolutely can not stand the taste of cucumbers. There are people who eat those things like they're apples. Blech!!!!
This is exactly what I came in to post. Whatever "salad" isn't coated in mayo is the one I prefer. This also applies to lobster/crab rolls.
